Bao Bun, pan fried.

They are a perfect Friday night, healthy pan fried steak buns; Bao buns or Sheng Jian bao. I can not explain how happy I was with the result. The best thing is you can have any filling, traditonally its pork but I did a spicy vegetarian/vegan one.

You know my love for gyoza, dumplings and momos but these are something special. I made a spicy veg filling using my balsamic roast mushrooms ( see previous post for recipe)

To make the dough:
-2 ½ cup all-purpose flour + more for dusting
-⅔ cup warm water approx.
-2 ¼ tsp instant yeast
-1/2 tsp salt (sugar optional)

-I used carrots, spinach, onions, mushroom and spinach.
-Saute the veg in some garlic, chilli and soy and cook well. Season with salt and pepper and add coriander. Add any protein to this.

-Make the dough mix with a wooden spoon and mix well. Take to a surface and kneed to form a ball. Drizzle some olive oil in the bowl and allow to prove for 45 mins, covered with a damp tea-towel.
-The dough will double in size and roll into long log and equally chop into 12 pieces.
-Roll into a balls and individually roll into a flat circle.
-Take 2 tsp of the filling and place in the middle and pleat and bring the edges together and scrunch tightly.
-Cook into 2 batches, sprinkle some sesame seeds on the pleated side.
-In a hot pan add 3 tbsp of oil and gently fry pleat side down until golden brown.
-Turn then over and add 60ml of water/or until base is covered to steam the buns. Keep the lid on and create steam until the water evaporates.

Spicy Savory Pancakes

I made these today and OMG they are perfect for any meal, pancakes are not just for breakfast. It’s a perfect Friday post and I hope you can make them for the weekend too. You can fill them with anything I did spicy potato inspired dosa.

Makes about 10 thin pancakes.
To make the pancakes:
-Fry 1tsp of cumin seeds
-Fry 3 minced garlic cloves and large thumb of grated ginger. 1 finely chopped chilli.
-Add to a bowl and add 130ml plain flour
-1 tsp of baking powder
-Spices; 1tsp of salt, pepper, 1/2 tsp of cumin powder
-1 egg/or use 3 tsp flax seeds mixed with water
-Handful of coriander
-275ml of milk and more if it gets too thick.

-Mix everything together and let sit for 10 minutes whilst you make an easy filling.
-If its too thick, add some more milk before you fry.
-In a fry pan wipe across some butter each time you ladle a spoon of mixture.
-Spread thinly creating a think circle.
-Once you see some holes flip over and cook for a few minutes.
-Keep a side and repeat.

-5 steamed medium potatoes, cooled and mashed into chunks by hand not fine.
-Fry 1tsp of cumin seeds, mustard seeds with 2 curry leaves
-Fry 3 minced garlic cloves and large thumb of grated ginger. 1 finely chopped chilli.
-Season with 1tsp of tumeric, garam masala, chaat masala, chilli powder.
-Add 2 tsp of passata and some water. Should be a thick paste.
-Hand a handful of coriander and the potatoes.
-Cover well and coat and cook for a few minutes.

Fill each pancake and roll up, dip into a yogurt raita. This recipe is on my post.
